A blue food truck is making its way around Northeast Louisiana offering ready-to-go Mexican specialties.
The Blue Taco food truck, which opened in 2020 during the pandemic, recently celebrated its second year in business. Owned by Casey and Taylor Sandidge, the food truck features fresh, authentic Mexican dishes.
Casey Sandidge said the food truck was a way for him to earn an income while he was sidelined in Grayson from working in the oil fields in the midst of COVID-19.
“I got stuck at home because I couldn’t travel so I thought about it for a month after being home,” Sandidge said. “I didn’t know if I was gonna go back to work so I talked it over with my wife and decided we should try out a food trailer.”
Sandidge said he chose to specialize in Mexican food because it is a niche in the food truck business. He said he previously debated on going with barbecue.

“Around here there’s always barbecue. I said, ‘What could I do that nobody else is doing?’,” Sandidge said. “You’ve got your Mexican restaurants but I ran across a taco truck around here.”
The truck features entrées such as the 3 Amigos, Mexican street fries, loaded nachos, taco salad and quesadillas, which range from $9 to $13. The 3 Amigos entrée consists of three tacos and a drink with the choice of pulled pork, Carne Asada (steak), chicken and ground beef.
Other menu items include Mexican Street Corn and chips with guacamole, salsa or queso.
The quesadillas are the truck’s bestsellers, which ironically wasn’t originally on the menu. Sandidge said he added the item a year into the business.
The quesadilla is a corn tortilla with toppings such as lettuce, tomato, slaw, onion, avocado, corn, salsa, shredded cheese, jalapeno, cotija cheese, crema lime and cilantro.

“It’s a little different,” Sandidge said. “I’ve never been anywhere where you can get one loaded with onions, tomatoes, jalapenos, slaw. So a lot of people get them like that. We make them to order. Anybody can have it however they want it really.”
Sandidge said business has been steady enough that he decided to work full-time with the truck. He said he gets a lot of compliments from customers about the food being close to authentic Mexican.
“It’s been going so good for us that I decided to do this full time,” Sandidge said. “I got out of the oil field, taking this on as my full-time job and now it’s really booming for us.”
The truck travels to several cities in Northeast Louisiana on select days from 11 am to 2 pm On Tuesdays and Wednesdays, the truck is in Columbia and Winnsboro, respectively, and on Thursday and Friday, the truck is in Jena and the Monroe-West Monroe area.
